Prosciutto Wrapped Halibut
You've got to try this prosciutto wrapped halibut recipe, submitted by Tracy Williment. This is delicious and nutritious.
Ingredients
- 1 untreated cedar plank
- 1/4 cup mayo
- 1.5 tbsp pesto
- 2 tsp. Lemon juice
- 4 thin slices of prosciutto
- 4(5oz) halibut filets from (highline fish company)
- 1 tbsp. Olive oil
- Pepper to taste
- 4 fresh basil leaves or dried is good too
- 4 thin slices of lemon.
Directions
- soak the cedar plank for 2 hours
- combine the mayo and pesto and lemon juice together in a bowl
- pre heat your bbq to med to high
- remove your plank from the water and dry just one side of the plank. Take your halibut and add pepper to it and wrap it with the prosciutto
- place a piece of the sliced lemon on top
- turn your one side of the bbq to low and keep your other side to med to high
- place your plank on the low side with lid closed for 15-18 minutes or until done
- serve with the pesto
