Prosciutto Wrapped Halibut

You've got to try this prosciutto wrapped halibut recipe, submitted by Tracy Williment. This is delicious and nutritious.

Ingredients

  • 1 untreated cedar plank
  • 1/4 cup mayo
  • 1.5 tbsp pesto
  • 2 tsp. Lemon juice
  • 4 thin slices of prosciutto
  • 4(5oz) halibut filets from (highline fish company)
  • 1 tbsp. Olive oil
  • Pepper to taste
  • 4 fresh basil leaves or dried is good too
  • 4 thin slices of lemon.

Directions

  1. soak the cedar plank for 2 hours
  2. combine the mayo and pesto and lemon juice together in a bowl
  3. pre heat your bbq to med to high
  4. remove your plank from the water and dry just one side of the plank. Take your halibut and add pepper to it and wrap it with the prosciutto
  5. place a piece of the sliced lemon on top
  6. turn your one side of the bbq to low and keep your other side to med to high
  7. place your plank on the low side with lid closed for 15-18 minutes or until done
  8. serve with the pesto
