Salmon
The waters around the east coast, inside passage of Vancouver Island are often referred to as the Salmon capital of the World, boasting chinook, chum, coho, cutthroat, pink, steelhead and sockeye.
A silver skinned fish with black cross-like spots over the body and head and above the lateral line, the flesh is pink to red with a medium texture with a fine, delicate taste. Salmon has a moist flavour with a large flake, ideal for grilling, baking and broiling.
