Sandra’s Simple & Delicious Black Cod recipe celebrates the natural richness of locally caught fish with minimal fuss and maximum flavor. Steamed gently with garlic, lemon, and herbs, then finished under the broiler, it delivers a buttery texture and delicate golden crust. Served with jasmine rice and a drizzle of soy sauce, it’s a fresh, wholesome dish that highlights the best of the coast.

Ingredients

  • 1 lb fresh or thawed Black Cod fillet (from Highline Fish Co)
  • 2 cloves fresh garlic, minced
  • Sea Salt and freshly ground Black Pepper
  • 1 slice of Lemon (remove after a few minutes)
  • A handful of fresh parsley, chopped
  • Olive Oil
  • Jasmine or Basmati Rice (for serving)
  • Soy Sauce (optional, for drizzling)

Directions

  1. Steam the Black Cod: Fill a pot with a few inches of water and bring it to a gently simmer. Add the garlic, lemon slice, salt, pepper, and parsley to infuse flavour into the steam. Place your cod in a steamer basket, cover, and steam for 12-15 minutes, until tender and flaky.
  2. Crisp the top: Transfer the steamed cod to an oven-safe dish and broil for 2 minutes to create a light golden finish.
  3. Serve and enjoy: Pair with Jasmine or Basmati Rice, a fresh garden salad, and a drizzle of sou sauce for a light, balanced meal.

Optional Air Fryer Method:
Brush the fillet lightly with Olive Oil, season with salt and pepper, and cook at 350 F for 20 minutes.

Tip: Add a side of roasted veggies or a squeeze of lemon for extra colour and freshness
