West Coast Boil

West Coast Boil Recipe photo. Taken fresh on a local BC fishing
              boat.

Ingredients

  • 3 lbs prawns(med/large)
  • 3lbs baby potatoes
  • 2-3 lbs smoked sausage of your choice(chorizo, garlic, andouille)
  • 6 ears corn, fresh is best but frozen works too
  • 8-10 oz Old bay seasoning (buy it in large quantity off Amazon is easiest)

Directions

You will need a crab cooker with the lift out strainer pot to make this

  1. Fill your turkey deep fryer/crab cooker pot with about 3-5 gallons of water as needed.
  2. Add old bay seasoning (add onions, garlic or any other aromatics if desired)
  3. Bring to a boil on your outdoor propane cooker
  4. When at a rolling boil, add potatoes and cook for 8-10 minutes
  5. Next add sausage and cook for 5 minutes
  6. Next add corn and cook for 5 minutes
  7. Add prawns and cook for 3 minutes
  8. Lift out strainer with all the goodness inside and let drain for 15-30 seconds.
  9. Then head over to the prepared picnic table (plastic tablecloth or paper secured to table).
  10. Pour the ingredients out on the length of the table, take a few photos and then begin to eat.

Serve with dipping sauces of your choice. (Sour cream and chives, melted butter, etc and of course, cold beer!) One batch will serve 8-10 people if you have more friends than that, just get another batch going and it will be ready to serve in less than 25 minutes.
